Pie Crust- Can't Fail (Ellen 1982)

Aunt Ellen Cox (Ione's sister)


2 1/2 cups flour (not sifted)
1/2 tsp salt
1 cup shortening, blend together

Add all at once:
1 T vinegar
1/4 cup ice water
1 egg beaten

Mix slightly with fork. Makes 4 crusts or 24 muffin tin tarts.

Banana Cream Pie- Grandma Grace

2/3 cups flour
2/3 cups sugar
1/2 tsp salt
4 cups milk, scalded
6 egg yolks beaten
4 Tbsp butter
1 tsp vanilla
6 stiffly beaten egg whites
3/4 cups sugar

Mix flour, sugar, salt and milk in saucepan. Cook until thick, slowly add egg yolks and cook 2 mins. Cool and add butter and vanilla. Cover with meringue after putting in baked pie shells. Make meringue with 6 egg whites beaten stiff and 3/4 cups sugar. Bake in 350 oven for 12 mins.

*Dont have to do a meringue top. Can do a whip cream top instead of meringue

Libbys Pumpkin Pie

*Directions for single 9in pie. For 2, 9in pies double recipe

2 eggs
1 1/2 cups pumpkin
3/4 cups sugar
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/4 tsp cloves
1 2/3 cups evaporated milk

Bake at 425 for 15mins or 350 for 45mins.

Grandma Ione's Baked Beans

2 large cans pork and beans
1 cup brown sugar
6 slices cut bacon (not cooked)
1 tsp prepared mustard
1 onion chopped
1 cup catsup

In large pan add the above ingredients. Cook on low or med temp until you reach desered flavor about 1 1/2 - 2hrs.

Grandma Iones BBQ SpareRibs

5 packages spareribs
2 chopped onions

Sauce:
2 1/4 cups brown sugar
1 1/2 cups vinegar
32 oz ketchup plus 2 cups (even better and still tastes good add 2-3 more cups ketchup) 2T and 2t prepared mustard
salt and pepper to taste

Bake spare ribs in oven uncovered for 1hr at 375. Pour off grease. Mix above sauce together on stove and heat to boiling then pour over spareribs. Sprinkle top with onions and cover. Turn oven down to 350 and bake for 1hr. If you have more time turn oven to 275 or 250 for 2-3hrs. The longer you bake them the more flavor is in the spareribs. Spareribs should be covered with the sauce so make more or less as needed. The main thing is to not let the spareribs bake dry. Watch that spareribs stay covered with the sauce.
